Can too much baking powder cause cupckaes to be gummy?

I baked a batch of vanilla cupckaes and they taste great but they are very gummy. Can the baking powder be the problem? Did I put too much? I put 4tsp for 2 2/3 cups of cake and pastry flour?Can too much baking powder cause cupckaes to be gummy?
Baking powder lifts the flour. If you had too much, you'd have a metallic taste in the cupcakes. I think the gummy thing is from something else. Maybe there is too much liquid in your cupcakes. Did they rise normally? If they rose normally and then went flat, you might have mixed them too much - and the flatness might have been gummy. Or, if you didn't cook them long enough, they might be gummy.

I think it's the quantity of milk (too much) and maybe you mixed it too much. Start with less milk and remember to mix all the wet ingredients together first. Then mix all the dry ingredients together separately and then mix both together gently just until there is no visible white flour. Report Abuse
